i made some awesome little vegan wraps. guacamole, hummus, spinach, cucumbers, carrots, baby corn, rice cheese, and tofurkey. yes, rice cheese and tofurkey. i’ve been looking for rice cheese ever since i saw them in ‘jess’s vegan tacos’ video. it’s not as weird-sounding as hemp juice ice cream (i wonder what that tastes like). tomorrow: add tomatoes and avocados.
i think the fact that i learned how to wrap the burrito properly is my crowning achievement.
